A New Fitness Craze???

For years now various companies have been selling fitness equipment and ideas all designed for the person that doesn't want to exercise. Get fit while keeping your ass on the couch! WOW! If I had known it was that easy - I never would have gone to the gym! I thought I had seen it all until this ...



This is way funnier than the Body Bean and Thigh Master combined!!! Who thinks up this stuff anyway??

Sweet 'N' Hot Glazed Salmon

Here is a great recipe that you don't have to light the grill for. You can do it right in the oven. This recipe is for 4 servings


Sweet 'N' Hot Glazed Salmon

1 1/2 cups apricot nectar (the canned stuff)

1/3 cup chopped dried apricots

2 tbs honey

2tbs soy salt (the low sodium variety)

1 Tbs grated ginger (the fresh stuff - it's in the produce department)

2 cloves fresh garlic minced

1/8 tsp cayenne pepper

1/4 tsp cinnamon

One 3/4 pound salmon filet without the skin

Pre-heat boiler and grease your broiling pan

In a saucepan over medium heat, combine the nectar, apricots, honey, soy sauce, ginger, garlic cinamon and cayenne. Bring to a boil then reduce to a medium low and simmer for 20 minutes or until reduced by half. KEEP YOUR EYE ON IT. Stir occasionally so it won't stick. Don't walk away and watch Big Brother or something.

Remove 1/4 cup of the glaze for basting and set the rest aside

Set the salmon filet on the pan and brush with the glaze. Broil 3 inches from the heat for 8 - 12 minutes or until the salmon flakes easily with a fork. Gently turn once during cooking and baste frequently for the last 4 minutes. Serve with the remaining glaze.

Remember to stay in the kitchen while you cook this. It isn't something that you can just toss in the oven then go do something else!

Have a nice dose of brown rice and a salad or some steamed veggies and you've got yourself a nice healthy meal!

Chicken, Feta Cheese and Sun Dried Tomato Wraps

I know, i can hear some of you already. Feta Cheese? EWWWW! but before you put on your wrinkly yuck face - just give it a try. I swear it won't hurt you. Be happy I haven't thrown tofu at you yet!!

This particular recipe makes 4 serving. A serving is one wrap.

Hey..lookie here! Two days in a row! Must be some type of record for me.

I know, i can hear some of you already. Feta Cheese? EWWWW! but before you put on your wrinkly yuck face - just give it a try. I swear it won't hurt you. Be happy I haven't thrown tofu at you yet!!

This particular recipe makes 4 serving. A serving is one wrap.

Chicken Feta Cheese and Sundried Tomato Wraps





2 four ounce boneless skinless chicken breast halves

1/4 cup sun-dried tomato dressing

8 sundried tomatoes (NOT oil packed)

1 cup boiling water

1/3 cup crumbled feta cheese

4 cups loosely packed FRESH spinach

4 ten inch whole wheat tortillas (Stop complaining - yes whole wheat)

1/4 cup sun-dried tomato dressing ( to drizzle on the wraps)

In a large resealable plastic bag place the chicken breast halves and 1/4 cup dressing. Refrigerate for at least two hours.

Pre-heat grill for high heat.

Combine the sundried tomatoes and boiling water in a bowl. Set aside for ten minutes. Drain well then thinly slice

Lightly oil grill grate. Discard the marinade. Grill the chicken for 12 - 15 minutes turning once

Cut chicken into strips and place into a bowl with the sundried tomatoes and spinach. Add feta and 1/4 cup dressing. Toss well.

Distribute the mixture between the 4 tortillas and wrap. Cut in half and enjoy cold or put it briefly back onto the grill until warm and crispy.

Nutritional Info Per Wrap: 390 Calories, 14.6g fat, 44mg cholesterol, 52.3 carbs, 23.4g protein

Hawaiian Chicken Kabobs

HAWAIIAN CHCIKEN KABOBS

3 TBS soy sauce. (i prefer the low sodium stuff)

3 TBS cooking sherry

3 TBS Brown sugar

1 TBS sesame oil

1/4 tsp ground ginger (fresh is best but the powder stuff works well too)

1/4 tsp garlic powder (NOT Garlic salt!)

8 boneless skinless chicken breast halves cut into 2 inc pieces

1 20 oz can pineapple chunks drained (again - fresh pineapple works really well)

Bamboo or thin metal skewers

In a shallow glass dish mix all ingredients except pineapple and chicken. be sure they are well combined

Add pineapple chunks and chicken

Cover and refrigerate for at least 2 hours

Lightly oil your grill. Thread chicken and pineapple onto skewers. Grill for 15 - 20 minutes or until juices run clear.

This is good served over cous cous which is very easy to make. Buy the box stuff. It cooks in ten minutes. Grill up some veggies to serve on the side and you've got a feast!

Meet My Mom

Hey everyone and good morning! I know that I've bragged about my dad here but today it's all about my mom. My parents are both in their late 60s. But you really wouldn't know it by observing their daily life.

They have a nursing home ministry which they have been doing for close to 20 years now.

Dad is an artist - an award winning one at that.

Mom has a part time job and - the thing that I'm probably most proud of - she plays on two Senior League softball teams!

She plays on a local team that has games on Wednesday nights in St Petersburg. Often times they will have a double header. Then she also plays on a traveling tournament team - The Silver Belles. No one on this team is under the age of 65.

Her last tournament they won 1st place after winning all 7 of their games over a period of 4 days.

I'm traveling to Florida next month and I'm going to be able to see her play. I'm looking forward to it! I'll get as many pictures as I can and write all about the action packed event!

My mom and dad never miss the chance to tell me how proud they are of me. Mom tells me on a regular basis. But I think this time I'm just a little bit more proud of her!!

What's Love Got To Do With It?

There's been a lot of blogs out there lately about relationships. Most of them talking about how "he done her wrong" or "I can't believe what a gold digger she is".

I've been there - both situations believe it or not... yes some guy wanted me to support him. I don't think he had a clear picture of my salary though or he would have moved on.

I'm definitely no expert on relationships. I've had to take many a crooked road.. tolerate some heartache and confusion and kiss many a toad to get to the relationship I'm in now. I stll don't have all the answers and I'm learning as I go. But I will say this - I am in the best relationship of my life.


Today - I have this great read that I've received in e-mails more than once and I'm sure most of you have read it more than once.. but its a great piece.

A Splatter Blog...

I've been trying for several days now to get a blog out. I've had some good ideas for topics but can't seem to get enough sentences together to constitute a posting. So I thought that I would combine all topics at one time and let you sort it all out!So here we go:

Last weekend, Target had a flyer which advertised Cheerios at 3 boxes for $8.00

Sounds like a decent deal until you look closer and see that the regular price is $2.69 a box. Your big savings when you buy 3? 7 cents. Umm yeah. I think I'll pass.

Last but not least - I heard on the radio this morning that there are ONLY 153 shopping days until Christmas. The rush is on. So before I get to caught up in the holiday spirit let me be the first to say
